Menu Planning Monday

For those of you in Auckland – happy Anniversary Day. I hope you enjoyed what has been a beautiful summers day, with hardly a cloud in the sky!

 Menu Plan this week:

 Monday: Leftover pie (recipe below) and salad

Tuesday: Spicy chicken strips with rice and cabbage salad with an asian salad dressing

Wednesday: Stir fried fish and asian green veggies with rice (we are in an oriental theme this week)

Thursday: I’ll use up the leftover rice with some steak fried rice.

Friday: BBQ at the beach!

Leftover pie

3 medium potatoes, peeled, cubed and par-boiled

4 eggs, beaten

3 sausages, or other left over meat, diced

cubes of fetta, or other left over cheese, diced

red or yellow peppers, cherry tomatoes, or other suitable veggies

Pan fry the potatoes. Add them to the beaten eggs along with the ‘leftovers’ and return to the fry pan. Cook on each side until well cooked. Great hot or cold, serve with lots of relish.
